Healthy natural muesli

This is a healthy natural muesli you can make in advance in a big batch and store in the fridge. Then you’ll always have a quick, nutrient-rich breakfast on hand – just top with fruit, yoghurt and milk of your choice. In winter, once the toppings are on, I often put the bowl in the microwave for 30 seconds to create a warm breakfast. This breakfast is really filling – it keeps me going until lunchtime!
Ingredients
- 250g rolled oats
- 100g sunflower seeds
- 100g pepitas (pumpkin seeds)
- 100g walnuts, chopped
- 100g flaked almonds
- 50g dried apples, chopped
- 50g sultanas
- 3 Tbsp linseed meal (flaxseed meal)
- 2 Tbsp chia seeds
- ½ tsp ground cinnamon
- ½ tsp vanilla bean powder
Method
- Mix all ingredients together thoroughly in a large bowl.
- Store in a container in the refrigerator (it’s important to store nuts and seeds in the fridge, especially linseeds, to stop them going rancid).
To serve, place 50g in a bowl. Top with chopped, fresh, in-season fruit, a dollop of Greek yoghurt (or a non-dairy substitute if preferred), and milk of your choice.
